Dr. Justin’s Avocado Fries

Avocados are one of the most powerful and healthy fruits we have access to. Unlike most fruits, avocados are primarily made of healthy fats. Yes, healthy fats. In contrast to unhealthy fats, the fats in avocados are full of heart-healthy monounsaturated fats; working even more effectively than fish oil on inflammation and cardiovascular health. Less inflammation means less pain and better quality of life.

These same monounsaturated fats are found in olive oil and are considered heart HEALTHY. They also help in reducing inflammation. Plus, these fats can decrease the likelihood of cancer mutations found in some genes.

Avocados also contain lots of other health related compounds. They are also high in fiber and antioxidants. Some of these antioxidants act as a defense mechanism against cataracts and macular degeneration. 

In summary- Avocados are full of Oleic Acid (monounsaturated healthy fat) that helps fight cancer AND inflammation (pain).  Avocados are a good source of fiber and are useful in weight loss programs.

Dr J’s Avocado Fries Recipe

Feeds 2-4 as an appetizer

Ingredients

  • 2-4 Large avocados

  • ½ tsp garlic powder

  • ½ tsp himalayan salt

  • ¼ tsp fresh ground black pepper

  • ½ cup almond flour (or coconut flour)

  • ½ cup almond milk or 2 pasture-raised eggs

  • 1-2 cups of Almond Meal/Ground Almonds/Bread crumbs

  • Coconut Oil or Coconut Oil Cooking Spray

Instructions

  • Preheat oven to 400.

  • Grease large baking sheet with coconut oil.

  • Slice avocados to desired size, whether chunks, sliced, diced, etc.

  • Combine salt, pepper, almond flour into dish.

  • Put almond milk (or beaten eggs) in separate bowl for dipping.

  • Put ground almonds in a separate, third bowl.

  • Dip avocado slices in flour mixture.

  • Move avocado slices from flour mixture and dip in milk (or beaten eggs).

  • Immediately dip the avocado slices into the ground almonds until covered.

  • Place slices on baking sheet.

  • Bake for 18-20 minutes until brown and crispy.
